The historical origin of red oil noodles

Walking on the streets of Yichang, looking at the numerous Sichuan-style noodle restaurants and red oil noodles with different soups but the same essential taste, I tend to think that it comes from Sichuan or Chongqing as to its history. Because Yichang is the entrance to Sichuan, regardless of roads, railways, or waterways, all people entering Sichuan must pass through Yichang. Therefore, Yichang’s taste is more towards Sichuan cuisine. Red oil noodles, of course it sounds like Sichuan style. But after years of changes, red oil noodles have become a unique delicacy in Yichang. The taste is more spicy than Sichuan, but not as spicy as Sichuan.

Beimen is an old place name in Yichang. Back then, people from Sichuan gathered at the north gate. It is likely that Sichuan noodles entered Yichang from here, and the fragrance spread throughout the city.
