Short pie is a famous traditional snack in Jingmen, Hubei Province. Its skin is soft, it melts in the mouth, and the stuffing is fragrant and delicious, with endless aftertaste.
The name of Dwarf School comes from a joke between founder Li Yanbing and husband and wife Gou Jinfang. 1998, they opened an unmarked pie shop in Yegong Street, Jingmen City. Many customers suggested a name, so a "dwarf school" was formed between Li Yanbing and Gou Jinfang.
The skill of dwarf school is inherited from Jingmen folk dwarf cake. Li Yanbing opened a pie shop in a town in the 1980s. Through continuous study and research, the formula of dwarf cake was improved, and the taste was increased from one to more than ten. Li Yanbing openly shared his skills with friends and family. Around 2000, dwarfism blossomed everywhere in Hubei Province. In 2003, people from all over the country came to learn dwarf pie skills. By 2020, there will be more than 100 cities in China with dwarf pie shops.
