The manufacturing technology of sparkling wine is mainly divided into bottle fermentation and pot fermentation, while bottle fermentation is divided into traditional method and transfer method. You may ask: didn't sparkling wine add carbon dioxide to alcohol?

Traditional methods are used to brew champagne, kava mant clemant. The specific steps are as follows:

Blending: Grapes are picked when they are immature (to maintain high acidity) and brewed into dry base wine. Brewers mix base wines from different years, varieties and villages to make mixed wine (Cuvée).

Bottle: add sugar and yeast to the blended wine, bottle and seal it.

In this process, dead yeast cells are deposited on the bottom of the bottle, which is also called distiller's grains. 4 | What is an excellent sparkling wine?

To judge whether a sparkling wine is excellent or not, we need to consider these four factors: bubble size, durability, aroma and aftertaste.

Bubble size: sparkling wine brewed by fermentation in bottles usually has fine bubbles, while other methods produce larger bubbles and make a loud sound when opening bottles.

Bubble persistence: the bubbles of wine fermented in bottles are also more persistent, and some high-quality sparkling wine bubbles can even last for dozens of minutes. If a glass of sparkling wine has just been poured into the cup, the bubbles will disappear immediately. Probably low-end sparkling wine.

Aroma: Old sparkling wine, especially vintage champagne, will have charming aroma, such as the taste of hazelnut and cream, and the acidity is moderate. This taste is determined by the grape variety itself and the brewing method.
