Vinegar has different flavors due to different brewing raw materials and technological conditions, and there is no unified classification method. According to the vinegar making process, it can be divided into brewing vinegar and synthetic vinegar. Brewing vinegar can be divided into grain vinegar (made from grain and other raw materials), sweet and sour vinegar (made from maltose, sucrose and sugar) and wine vinegar (made from edible alcohol and wine tail). Grains vinegar can be divided into smoked vinegar, special vinegar, fragrant vinegar and bran vinegar according to different processing methods. Synthetic vinegar can be divided into colored vinegar and white vinegar (white vinegar can be divided into ordinary white vinegar and vinegar essence). Brewing vinegar is the best vinegar, among which grain vinegar is the best.
Vinegar tastes sour and mellow, and the liquid is fragrant and soft. It is an essential condiment in cooking, and its main components are acetic acid, higher alcohols and so on. The existing vinegar mainly includes rice vinegar, smoked vinegar, special vinegar, sweet and sour vinegar, wine vinegar, white vinegar and so on. According to different varieties of producing areas, the amount of acetic acid contained in vinegar is also different, generally between 5% and 8%. The acidity strength of vinegar is mainly determined by the amount of acetic acid contained in it. For example, Shanxi mature vinegar is sour, while Zhenjiang balsamic vinegar is soft and sour, but not strong.
