Because first, the life of pickled vegetables should not be too long, preferably not more than 40 days, otherwise it will taste like chewing straw and lose the sour and crisp taste of pickles.

When the harvest shaft is white, it is best to be sunny. Hang the cut shaft on the falling wire or rope for a day or two.

The difference is that pickled vegetables don't need cold boiled water, because the water content of washed vegetables is high, so just put stones on them.

In order to prevent the stone from being too light, my mother often puts an empty bucket or board on the stone, and then carries a big bag of wheat or rice on it with my father to ensure that the salted arrow white comes out quickly and completely submerges the stone.

After a month's pickling, the original green arrow shaft white turned into golden yellow and became sour and delicious pickles.
