Functions and uses of gel sugar

An American patent introduces the method of converting beverage wine into solid edible candy. The alcohol content of beverage wine can be 25%-75%, and completely aged whisky, rum, brandy, fortified wine, strong cocktail, soaked fruit wine and so on can be selected. Carboxymethyl cellulose is used as an edible gelling agent to gel the beverage wine, and then this soft and deformable gel product is put into an edible capsule made of carbohydrate (natural gum can be selected) to make an edible gelled beverage wine candy.

Example 1 5g carboxymethyl cellulose was added to each 100 ml whisky, and the mixed solution1-2min was stirred and frozen until a viscous and deformable gel was formed. This gel will not dehydrate and shrink for a long time. Then roll the gel into aloe gel dry powder, which can be made from the leaves of aloe vera. Finally, the powder gel product was dried into elastic soft candy samples, packaged and stored at room temperature for several months. Like chocolate candy best, put the product in a box with tin foil to keep the product fresh.

Example 2 7% methylcellulose was mixed with whisky at room temperature to form a stable gel, and then it was injected into a mold pressed with slightly wet Cuar (gum protectant) powder, such as a wine glass type, and then the open upper part was covered with more Cuar, and then it was dried and molded.

Example 3 Before the gel beverage wine is put into the cup-shaped model described in Example 2, hot high-concentration syrup is sprayed on the outer surface of the gel beverage wine, and after cooling, crystalline sugar can be generated, which is wrapped in glass to form a sugar-wrapped cover. Finally, the wine was injected and sealed according to Example 2.

Example 4 Carbohydrate particles composed of steamed grain flour were immersed in a gel, which is a calcium salt of glucose, mannose and polyuronic acid glucoside, and then the warm grain flour gel was put into a cup-shaped model, dried and taken out of the model. The gelled beverage wine prepared in Example 1 was poured into a cup, coated with a thin layer of calcium polyuronic acid impregnated with cereal flour, and dried in the air.
