First, powder the noodles. Many food markets in Wuhan sell fat and alkaline noodles, which are also cheap. Spread the fished noodles on the chopping board, blow them to death with an electric fan, pour oil while blowing, and stir them with a long tool (such as chopsticks for frying fritters). No matter how delicious the seasoning is, the noodles with the wrong taste will lose the style of Regan Noodles.
After mixing the noodles and cooling them, start to prepare seasonings. Sesame paste should be authentic and sesame oil should be authentic. Then use this authentic sesame oil to slowly boil the authentic sesame paste into a thin paste. Must be mixed with sesame oil. Many street stalls mix sesame paste with hot water to save money. In addition to sesame sauce, soy sauce, salt, monosodium glutamate, chopped green onion and pepper, you can put Chili sauce in those who like to eat spicy food, which is the basic member of Wuhan Regan Noodles. In recent years, sour beans, kelp, diced radish and pickles are often added. Although delicious, it hides the original aroma of sesame paste from another angle.

Wuhan dry noodles
Ingredients: sesame paste, sliced water, onion, ginger, garlic, Chili noodles and pickled peppers, vinegar and soy sauce.
Exercise:
1. Boil sliced water until it is 80% mature, scoop it up and mix it with edible oil, then spread it out and dry it;
2. Cut the onion, ginger and garlic into sections before eating, and preserve the pickled radish pieces for later use;
3. Put the oil in the pot, pour in the sesame sauce, stir well and pick it up;
4. Put the noodles in a special bamboo hat and blanch them with boiling water for half a minute until cooked;
5. After picking up the noodles, add all the seasonings and mix well to serve.
Exercise 3:
Pork belly Regan Noodles
Materials:
Liubiju dry soy sauce, straw mushroom soy sauce, garlic, ginger, cucumber, red pepper, pork belly, Regan Noodles strips.
Exercise:
1. Cut the pork belly into cubes.
2. Wash Liubiju dry sauce with appropriate amount of water.
3. Pour the prepared oil into the pot, heat it, add minced garlic and Jiang Mo, and stir-fry the diced meat until it changes color.
