Stewed mutton soup
Ingredients: mutton, onion, ginger, dried pepper, prickly ash, hawthorn slices, clean water, hot water, cooking wine and salt.
Step 1: Cut the mutton into pieces, soak it in clear water for 15 minutes, and take it out and control the water for later use.
Step 2: Wash and cut the onion, peel and slice the ginger, and cut the dried pepper into small pieces.

Step 3: Add cold water to the pot, add mutton, bring it to a boil with high fire, pour in proper amount of cooking wine until the floating powder and blood boil, and take out the mutton and control the water for later use.
Step 4: Prepare a clean pot, add mutton, onion, ginger slices, dried peppers, prickly ash and hawthorn slices, and pour in more hot water.

Tips:
1, mutton must be cooked in cold water, because hot water will coagulate blood and dirty things on the surface of mutton, which will make mutton dirtier and smell and taste heavier.
2. Putting a few pieces of hawthorn when stewing mutton can not only make mutton fresh, but also soften the fiber in mutton and accelerate the softening of mutton.
When you stew mutton, you must put salt at last. If released in advance, it will not only cause nutrient loss, but also make mutton feel a little firewood.
