How to accelerate the aging of liquor

Method:

1. High temperature aging can make liquor more mellow while sterilizing. This is a traditional wine aging method, and its temperature can be controlled at 50 to 60 degrees.

2. Microwave radiation is another thermal aging method, and its microwave frequency range is 3000 ~ 1500Hz, because microwave radiation can have two effects on wine, on the one hand, it can increase the temperature of wine, volatilize low-boiling substances in wine and improve the quality of wine, on the other hand, it can make polar molecules in wine rotate, accelerate the friction and impact between molecules and promote the association between molecules;

3. Various methods, such as visible light, infrared light, ultraviolet light, laser and radiation, all belong to light aging, which have different degrees of aging effect on liquor. Ordinary strong light sources, such as iodine tungsten lamp and ammonia lamps, have wide continuous spectrum and are good aging light sources;

4. Ultrasonic wave acts on the aging process of liquor, which increases the activation energy of molecules, makes the molecular collision fierce, promotes esterification and redox reaction, and is beneficial to the formation of alcohol flavor of liquor. At the same time, ultrasound can also strengthen the efforts to form associations among various associations in liquor, especially to increase the association between ethanol and water molecules and form a large and stable polar molecular association group.
