Hand-brewed coffee is the "third wave", the most popular coffee brewing method in today's specialty coffee era. Both its production method and coffee flavor are worthy of in-depth study and discussion.
We should thank Bentz Melitta, a German housewife, for this filter-style coffee brewing method that is popular around the world. She invented the coffee filter method more than 100 years ago, rewriting the history of coffee drinking in Germany and the world. Before this invention, people used cloth bags to filter coffee grounds. However, cloth filter bags are troublesome to clean and unhygienic after repeated use. The coffee grounds remaining in the gaps of the bag can easily destroy the original taste of coffee. On June 20, 1908, Melita registered her invention with the Royal Patent Office: a copper coffee filter cup with a water hole in the arched bottom. This was the world's first filter coffee cup. . Melita Benz established "Melita Company" in her residence with very little money at that time, and used her own signature Melitta as the registered trademark of the product.
Like siphon coffee, with the rise of specialty coffee culture, hand-brewed coffee has also ushered in a new spring. This ancient way of brewing coffee has miraculously taken root and blossomed in the Eastern land, especially Japan, South Korea, Taiwan and mainland China have experienced unprecedented vigorous development and are in the ascendant. Especially since the 1950s, the Japanese have almost become obsessed with brewing coffee, using filters of various materials. Traditional and drip-type coffee filter cup utensils are emerging in endlessly, and a complete set of theories and operating techniques for hand-brewed filter coffee have been established, which has been favored by more and more people. It really corresponds to the proverb "If the West does not shine, the East shines." .
☆This time we use HARIO V60 three-person sharing pot and filter cup to make coffee for two people. The usual ratio of powder to coffee liquid is 1:12~15, which means 10 grams of coffee Powder 120~150ml of coffee liquid (usually the sharing pot will be marked with 100ml, 200ml, etc.).

About the grinder: I would like to recommend that friends who like to drink freshly ground coffee invest in a reliable quality grinder. Whether it is electric or hand-cranked, the quality is much better than buying coffee powder, and the price is generally lower than that for household use. Not very high.
About hand pouring kettles: There are many kinds of hand pouring kettles. Different brands, different materials, different styles, and different price points are dazzling. It seems difficult to choose a hand pouring kettle that suits you among many hand pouring kettles. It's an easy thing, but it requires everyone to do more homework to understand different hand-made kettles. If you have the opportunity, it is best to try them yourself to choose the "magic kettle" that is suitable for you. The Japanese brands recommended here are KALITA, HARIO, Taguchi Mamoru, Yuetu, etc. Of course, the prices are relatively high. Domestic brands such as TIAMO and Shokoxing are relatively cheap. But as I have said before, as long as the coffee is not a lie, , mostly you get what you pay for, so everyone chooses according to their actual situation. Here we choose HARIO 1.2L stainless steel hand pouring kettle, which is also the most common hand pouring kettle in international barista competitions.
About sharing pots and filter cups: There are also many choices for sharing pots and filter cups. Sharing pots are mostly made of transparent glass, which makes it easy to observe the amount of coffee. Filter cups are different, like hand It’s the same as making a pot, so we won’t go into details. You can make your own choice. Here we choose the HARIO V60 No. 01 ceramic filter cup.

Operation steps: 1. Fold the filter paper: Take out a piece of fan-shaped filter paper, one side of which is pressed by a machine and the side is thicker. (Selection of filter paper: Filter paper is divided into large and small models. Choose according to the selected filter cup. It is also divided into bleached and original pulp filter paper. The bleached filter paper has less pulp smell, so we choose the bleached filter paper)

Fold the thickest side and flatten it
6
Open the filter paper, align the two center lines, and press it lightly. (Do not press the two fans to form a fold line!)
7
Place the folded filter paper in the filter cup 2. Weigh the coffee beans: Weigh the coffee beans 20g (there is a saying that 10g is used for one cup. For two cups, it can be 15g or a little less than 20g. In fact, it does not comply with the extraction principle. If you want to get a lighter coffee, you can reduce the amount, but when making two cups of coffee, the amount of coffee It is incorrect to say that the amount of beans can be reduced. Players can try it on their own. The taste is really different)

3. Grinding powder: hand-cranked bean grinder Coffee beans

4. Heating water: It is best to use a thermometer to measure the water temperature to make the water temperature accurate. The water temperature range for hand brewing is relatively large, 83~95, but different water temperatures will appear The taste is definitely very different. Different beans require different water temperatures for different roasting degrees. Players need to adjust themselves to find the most suitable water temperature for them.

5. Wet filter paper: Pour hot water evenly on the filter paper to make the filter paper completely wet and adhere tightly to the filter cup, then pour it into the sharing pot of hot water. (Many people are not used to wet filter paper and think it is unnecessary. In fact, the biggest functions of wet filter paper are three: 1. Wash away the impurities and paper smell of the filter paper 2. Make the filter paper adhere to the filter cup 3. Warm the filter cup and sharing pot )
11
6. Pour the ground coffee powder into the filter cup and pat it flat gently.
12
7. Stew and steam: Evenly pour water on the coffee powder, about 1.5 times the grams of coffee powder (must be poured thoroughly, but do not drip water into the sharing pot) Too much)
There is no fixed time for stewing and steaming. Fresh coffee powder will begin to absorb water and expand after filling with water. When all the coffee powder has absorbed water, the expansion will stop and the steaming process will stop. At this time, It’s time to add water. (Whether the expansion or the size of the expansion has a great relationship with the degree of roasting and freshness of the coffee. The fresher the coffee powder, the greater the expansion, and the darker the roasted coffee powder, the greater the expansion.)

8. Add water: Beginners need to pour water evenly when making hand brews. There is no need to deliberately pursue any brewing method. As long as it is even, it will not taste bad. It is recommended to start pouring water from the midpoint, and then draw concentric circles in one direction until the The periphery, but do not rush to the filter paper, and then draw concentric circles until the center is repeated. The water flow should be kept stable. The water can be filled in two or three times. Many players have disputes about whether to divide it into sections in the middle. As for the difference in taste, the aesthetics have not been drunk. , so I won’t go into details here, players can try it by themselves.
14
9. Complete the extraction: The extraction is over, and about 240ml of coffee liquid is obtained. Finish filling the water, remove the filter cup, and our delicious coffee will be in the sharing pot.
15
10. Enjoy coffee: Pour the coffee from the sharing pot into a warm coffee cup, and you can enjoy a warm cup of delicious coffee.
