2. Sealing method. Take 1 plastic film bag or clay pot, put intact winter bamboo shoots into it, and tie the plastic film bag tightly, and tie the clay pot tightly with plastic film. Storage methods can reduce the evaporation of water, and the carbon dioxide emitted by bamboo shoots can naturally reduce oxygen, thus inhibiting the respiratory intensity of bamboo shoots, so the quality of winter bamboo shoots can remain unchanged for about 2 months. ]

3. Low temperature storage. Choose winter bamboo shoots without obvious damage, peel them and put them in the refrigerator with shells or plastic bags. The temperature of the refrigerator is controlled at about 5℃. Winter bamboo shoots can be stored at low temperature for about 3 months, but winter bamboo shoots with shells lose water quickly, become soft and have poor quality.

4. Stove fire storage method. Bury winter bamboo shoots with shells in a fire and simmer until they are soft and hard. Take it out after simmering, put it in a cool and humid place, put it vertically, remove its shell when eating, cut it into bamboo shoots, rinse it with clear water to remove the bitterness. This method can preserve winter bamboo shoots for 35~45 days.

5. steaming. Peel and wash the winter bamboo shoots, cut the big bamboo shoots in half, steam them in a steamer or boil them in a clear water pot until they are five or six years old, pick them up, spread them in a basket and hang them in a cool and ventilated place, or put the boiled (steamed) winter bamboo shoots in cold water, and change the water every 1~2 days.
