In recent years, with the exposure of several major malignant food safety incidents, the government and the public have paid more and more attention to food safety, and invested more and more in food safety testing related research. Meat consumption is an important part of people's "eating" problem. In order to prevent problematic meat from circulating in the market, we must rely on accurate, fast and portable quarantine inspection methods to monitor the market.
According to reports, the main components of meat are protein (including myofibrillar protein and sarcoplasmic protein), moisture, lipids, a small amount of extracts (nitrogen-containing and nitrogen-free substances) and trace vitamins. In the process of meat freshness change, the absorption coefficient and scattering coefficient will change correspondingly due to the change of meat main component content and meat structure. The change of meat quality can be reflected by measuring the change of both or directly expressing the parameters of the change.
Wen Xing of China Academy of Agricultural Sciences and other experts published a special article in Journal of Agricultural Engineering, No.9, No.20 20 10/0, pointing out that the researchers of this research group used the steady-state spatial resolution spectroscopy technology to form a detection system composed of multi-channel short-wave near-infrared spectroscopy instruments to obtain optical parameters, thus obtaining a more effective method for studying the optical nondestructive detection of pork freshness. This method can be used to measure the meat quality information with a certain detection depth, which makes the results more accurate and reliable. Researchers measured the optical parameters of meat with a testing device (principle prototype). Through a large number of experiments, it was proved that volatile basic nitrogen (TVB-N, mainly mixed amine) would be produced in the process of meat spoilage, and the structure of meat would change significantly. In the short-wave near-infrared range, the correlation between near-infrared spectrum and TVB-N can be established, so as to evaluate the freshness of meat. This study provides a theoretical basis and design basis for designing a discrete wavelength short-wave near-infrared nondestructive freshness detection system. According to another introduction, this project, as one of the national "863 plans", has applied for a national invention patent, and it is planned to be popularized and applied within two years.
This is the research result of the article "Detection method of pork freshness based on steady-state spatial resolution spectrum" which was recommended by the meeting between scientific journals and news media in this issue. The other three recommended achievements mainly include the integrated research of new tower solar thermal power generation system, the rapid detection of adulterated milk by low-field nuclear magnetic resonance combined with principal component analysis, and the misreading of debris flow by Professor Li Siguang in Lushan Quaternary Glacier. The four research results recommended in writing are: the experimental study on spray disinfection of chickens with neutral electrolyzed water in egg chicken farm, the selection of key indicators for evaluating the investment benefit of rural infrastructure, the research on the production line and equipment of biomass solid molding fuel, and the inhibitory effect of simvastatin on the heart and fibrosis of apolipoprotein E-deficient mice fed with western-style diet. G. PPARα and γ expression and decrease the levels of TC, MMP-9 and Cat.
