Instructions for use
How to process fresh duck intestines: Purchase fresh duck intestines, scrape off the oily shreds, wash them clean, add tenderizing agent and stir evenly.
① Pickling method: Used when processing a small amount of intestines, the dosage is 8‰-1.2%, that is, add 4-6g of crisping agent per kilogram of duck intestines, and use a little ginger juice (or 50-50% warm water 55℃), stir evenly, marinate at room temperature for 30-40 minutes, wash 1-2 times, serve or refrigerate.
②Soaking method: When processing a large amount of intestines, mix the tender crisp agent with warm water at 50-55°C into a liquid. The dosage is 1%-1.5%, that is, 1 kg of duck intestines plus 10-15g tender crisp agent, and make the ratio of intestinal weight to liquid 2:1, stir evenly, soak for 30-40 minutes, then wash with clean water 2-3 times (to prevent excessive tenderization) and serve, during the soaking process, turn once or twice , the effect is better.
※Tip: If the processed duck intestines are not cooked in time, wash them repeatedly and add a small amount of water and place them in the refrigerator. When washing, do not use too much force and stir gently.
