How to make sweet sprinkles and steps

Xiaoqu sweet rice wine is called sweet wine in our hometown, and it is also called glutinous rice wine in some places. It is one of my favorite delicacies. Xiaoqu sweet rice wine is rich in protein, lysine, calcium, magnesium and other elements. Regular consumption has the effect of promoting blood circulation and removing blood stasis, dispelling cold and dampness. Last year, I often made sweet rice wine to eat, and accumulated some experience. Now I will share with you my method of making sweet rice wine in a rice cooker.

First, wash the glutinous rice. My method does not require soaking the glutinous rice in advance. Just clean 250 grams of glutinous rice, put it into a rice cooker, and add an appropriate amount of water. It is very important to add the right amount of water. If the glutinous rice is too rotten or too hard, it is not suitable for brewing rice wine. The water can cover the glutinous rice with just one finger.

Secondly, cook the glutinous rice and cool it. Wash the glutinous rice and add an appropriate amount of water, then plug it in and cook. After the glutinous rice is cooked, be sure to let it cool naturally. When it is completely cool, take half a cup of cold boiled water. Pour water into the glutinous rice and beat it with chopsticks. Powder the glutinous rice into pieces and then add the koji.

Finally, stir the koji thoroughly. After the glutinous rice is broken up, you can add the distiller's yeast. Just add 3 grams of sweet distiller's yeast to 250 grams of rice. Add the koji slowly, stirring as you add it, so that the koji and glutinous rice are fully integrated. This step is time consuming and must be stirred evenly. After stirring, make a small pit in the middle of the rice cooker, and then sprinkle a little koji powder to promote the rapid fermentation of the rice wine.

Stir evenly, cover with plastic wrap, close the lid, and you can wait for the delicious sweet rice wine. When the temperature is low, everyone must remember to wrap up in cotton clothes to promote the fermentation of rice wine. About thirty hours later, the aroma of sweet wine will hit your face, and the small pit in the middle of the glutinous rice will ooze juice, which means that the rice wine has been brewed successfully.

The process is very simple, and it saves the trouble of traditional steaming glutinous rice. If you want to drink Xiaoqu sweet rice wine, you can brew it in one pot. Everyone should try it.
