Reflection on the God of Japanese Additives

Ambrose was born in Fukuoka Prefecture in 195 1. JAS judge of Kumamoto Organic Agriculture Research Association, and obtained 4 national patents.

After graduating from chemistry department of Yamaguchi University, he entered the food class of comprehensive trading company and worked as a food additive for more than 20 years. He is called "the walking dictionary of additives" and "the God of food additives". He is not only familiar with the functions and usage of various additives, but also can distinguish pure additives used in food with his tongue.

Entrusted by a food processing factory, he made delicious meatballs with sticky waste meat and twenty or thirty kinds of additives. After the product went on the market, it was very popular with children and mothers. It sells well. He used to be proud of it, but when he saw his daughter eating this kind of meatballs. Only then did he realize that his family were also consumers of the food he developed. He fell into deep remorse and resigned from the food additive company. After that, he was invited to give a speech on additives, which was widely praised for its easy to understand, vivid and interesting.

In 2005, "Food on the Back-Everyone's Favorite Food Additive" was published, with a sales volume of 70 million copies. Japan holds about 150 lectures every year. The best-selling reading in China, The Big Secret of Food Truth, is recommended to all partners who care about POSUL and healthy eating.

I want to establish the first additive company in China.

This was 30 years ago.

Joined a food additive company after graduating from college. The job is to sell additives to customers such as food processing groups, local food processing plants and individual stores.

When I first entered the company, I first saw the chemical names of additives: sodium nitrite, potassium sorbate and glycerol fatty acid ester. ...

I studied chemistry in college, but I'm still a little surprised: those things are used in the food we eat in our mouths.

The first time I saw the food processing site, I was amazed. The effect of additives is amazing!

Light brown shriveled radish, if soaked in additives overnight, will become a beautiful radish pickle in Huang Chengcheng. Crispy and delicious, everyone will think it's delicious.

And because of the use of additives, the salt content is lower than that of the previous pickles. It's also good for your health. I really admire it. It is simply "magic powder"!

I feel that I have met a career that suits me.

Ok, I will redouble my efforts to establish the first additive company in China.

Handmade noodles in a noodle restaurant are very popular, and the boss's goal is to open a number of chain stores.

However, the craft of making handmade noodles should be cultivated through years of practice. Even if you teach a person who has worked in the kitchen for many years, he can't reach the boss's own level.

"If flour is added to the dough, it is easy to make noodles with smooth ribs. Then it is easier to add this and this. " I'm on the stage.

After that, I suggest using several additives such as emulsifier and phosphate.

In fact, with these additives, the process is useless. Anyone can easily make gluten noodles.

I also put forward a simple method of making soup. "It's too late in the store. If the factory produces a lot of bottled soup, it will be faster and cheaper. "

So, I began to develop soup that tasted like that noodle restaurant. I use additives such as chemical seasoning (which belongs to "flavoring agent" and can enhance the flavor) and sour agent to reduce the price of raw materials, and finally transport them in gallon barrels.

"Dilute this soup ten times and you can drink it."

The boss is very happy. Originally, it took a lot of manpower and material resources to make handmade noodles by fermenting dough with feet, but due to the existence of additives, the work became very easy, and the soup could also be directly taken out of the bucket and diluted with water.

Then, noodles can be produced in batches without spending a lot of time and energy. I'm also glad that the boss has opened the second and third stores in succession.

I often say that "additives don't need craftsmen", and things with a certain level can be made without technology.

However, this is equivalent to selling their souls to artists. How many important things have been lost behind rationalization.

I didn't even think about it at that time. Not only that, I am also eager to create a new food culture through additives.

I am the chief sales officer of the company, and my sales performance has soared. It's like playing multiplication. I am very happy at work.

When the additive is delivered, the buyer sometimes asks, "We want to produce this product. Can you help us develop it? " So pickles, snacks, hamburgers, drinks, instant noodles … we have developed almost all kinds of commodities. And the goods are very popular.

The general manager not only thanked me with tears, but also said that he would build me a bronze statue, which really embarrassed me.

I don't know when it began to be called "the walking dictionary of additives" and "the god of food additives". Local food processors and craftsmen all said that they were "responsive".

That night, I stayed up all night.

"Long-term storage, beautiful appearance, delicious taste and low cost."

These are all because of food additives. You can easily make good quality products without complicated technology and superb technology.

But there are advantages and disadvantages. The disadvantage is that the toxicity of food additives is harmful to human body, and what is even more frightening is that additives will destroy our food culture-the traditional techniques accumulated over time are abandoned, and the taste of counterfeit products is considered to be genuine. People, especially children who have lost their real sense of taste, will think that food is easy to get, but they don't know how to be grateful and cherish everything in nature and the labor of others.

But that's just on paper. I didn't take them as real problems. Not only that, I also think that additives are indispensable things in the world, and I regard myself as the "savior" for manufacturers and craftsmen to relieve their troubles, and even think that I have made contributions to the development of the food industry.

Until that day, something happened that can be said to be a turning point in my life.

It was my daughter's third birthday. I came home from work early.

The table is full of food prepared by his wife. There is a plate with meatballs and cute Mickey Mouse toothpicks on it. I picked up one and threw it into my mouth, and suddenly I froze.

That's just meatballs I developed.

I quickly asked, "What's the matter? Did you buy it? Is it made by xx? Show me the bag. "

That's right. It's really my own product, but I didn't notice it at once because Mickey Mouse toothpick was inserted on it and my wife's soup was poured on it.

"This kind of meatballs is very cheap, so I often buy them. When it comes out, the children will grab it. "

I looked up and saw my daughter and son eating meatballs with relish.

"Wait, wait, wait!" I quickly put my hand over the plate with meatballs. The whole family was stunned.

As a special commodity in the supermarket, that kind of meatballs was developed by a manufacturer.

That manufacturer bought a lot of cheap minced meat. Chopped meat is a part that can hardly be called meat, and is usually used as pet feed.

These minced meat can't be made into minced meat, and it has no taste, but it's really beef, and it's very cheap. So he came to me to discuss how to deal with these minced meat.

The meat is sticky, thin and tasteless, and it is not edible at all. How can we turn it into something edible?

Add some chicken that won't lay eggs first to increase the weight. There are laying hens and broilers. Broilers mainly eat meat, and laying hens mainly eat their own eggs. The meat of laying hens and broilers is very different, and the price is also different. Moreover, the meat of chickens that can no longer lay eggs is used here, and the price is cheaper.

Then add something called soy protein to create a soft feeling. This soybean protein, also known as "artificial meat", is still used to make cheap hamburgers.

In this way, we finally have a certain foundation. However, just like this, it still has no taste, so I used a lot of beef sauce and chemical seasonings to enhance the taste. At the same time, lard and processed starch were added to make the taste tender and smooth.

In addition, adhesives, emulsifiers, etc. Has been added. Because the machine is used for mass production, it is much easier to operate.

In order to make the color look good, I also used colorants; In order to prolong the shelf life, preservatives and pH regulators are used. To prevent fading, use antioxidants.

In this way, the meatballs are basically ready.

Twenty or thirty kinds of additives are used in the whole production process, which can really be called "additive pile"

The price of a box of meatballs I developed is less than 100 yen (about RMB 6.8 yuan). The price is set so low because the cost is only twenty or thirty yen.

As soon as the product went on the market, it was immediately popular and loved by children and housewives.

That manufacturer built a building on the profit of this commodity alone.

"Dad, why can't you eat those meatballs?"

"In short, you can't eat this, don't eat it!"

I took the plate away, and while making an unexplained explanation, I fell into deep remorse.

My children are happily eating meatballs made by adding additives to sticky minced meat. Sodium tripolyphosphate, glycerol fatty acid ester, calcium phosphate, red No.3, red 102, sorbic acid, caramel pigment ... The children ate these things with relish.

It was then that I clearly realized that I didn't want my children to eat this kind of meatballs at all.

It turned out that I only thought I was a "producer" and a "seller". At that moment, I realized that I was also a "buyer"!

That night, I stayed up all night. I began to doubt my "lifelong career".

The next day, I resigned.

A day for Ms. Q, an ordinary housewife

Ms. Q (38 years old) has a 3-year-old child. She only eats lunch. In addition to lunch, she tries to cook by herself and pays great attention to the collocation of nutrition.

But after reading the following, everyone will understand that she has no concept of additives at all.

Breakfast: rice, miso soup, pickled radish, grilled fish, roe and fish cake.

Eating fish and vegetables for breakfast seems a "healthy" diet.

However, in this seemingly healthy breakfast, the amount of additives contained is amazing.

The first is miso soup. Ms. Q prefers to use a convenient soup bag, just pour it out and heat it, instead of cooking it herself. This miso soup contains several additives. As for caviar and fish cake, they are foods with many additives.

In this way, Ms. Q has at least 30 kinds of additives for breakfast.

Lunch: Taijuan Sushi

Sushi is rich in scrambled eggs, fish floss, cucumber, pickled radish, shrimp and fish cake.

This kind of sushi is more expensive. The number of additives used is amazing, with a total of more than 30 additives.

It should be noted that the amount of additives will increase with the increase of content types.

Ingredients: vinegar rice, scrambled eggs, fried tofu, fish floss, shrimp, pickled radish, cucumber, tuna, fish cake, laver, vinegar and sugar.

Additives and seasonings (amino acids, etc. ), potassium sorbate, stevioside, licorice, sour agent, emulsifier, sorbitol, glycine, pH regulator, polylysine, pectin complex, protamine, antioxidant, defoamer, coagulant, Undaria pinnatifida extract, thickening polysaccharide, Red No.3, red 106, carmine and caramel pigment.

Dinner curry rice, salad (with sauce)

Dinner is curry rice and salad that both husband and children like very much.

Curry rice (solid curry block)

Ingredients: butter, pig fat, wheat flour, starch, edible salt, curry powder, vegetable powder (onion, onion, carrot, tomato, potato), animal meat extract, skim milk powder.

Additives, seasonings (amino acids, etc. ), emulsifier, acidulant, antioxidant, colorant (caramel pigment, chili red) and perfume.

Sauce

Raw materials include vegetable oil, soy sauce, brewing vinegar, onion and sugar.

Additives: seasoning (amino acids, etc. ), acidulant, emulsifier, thickening polysaccharide, stevioside, pH regulator and perfume.

How many kinds of additives does Ms. Q eat a day? There are at least 60 kinds of rice in all.

It is a terrible thing to buy without thinking and eat without thinking.

Three quarters of people support food additives.

This is a survey on food safety awareness. The survey set the following four consumption types for 177 people over 105, and asked participants "which type do you think you belong to". Please think about it and sit down accordingly.

① Active consumers

Think that "food agriculture" is the source of life, and it doesn't matter if you buy a safe and expensive one. In addition, try to participate in activities such as supporting agriculture.

② Healthy and progressive consumers.

For the sake of family health and food safety, pay attention to diet and life, and often go to the market to buy food.

③ Indifferent consumers

I am busy every day. Although I know that diet is very important, I am satisfied as long as I can eat something cheap and delicious.

④ subdivide consumers.

Although attention was paid to food safety and family health, no special measures were taken.

Well, what kind do you belong to?

The following are the responses of the participants.

Through this survey, we know that only 22. 1% of "active consumers" and "healthy consumers" are willing to pay a slightly higher price for food safety. Although concerned about food safety, "divided consumers" without special measures account for more than half.

In other words, more than half of people's understanding and actions on food safety are inconsistent. Indeed, although we know that pesticides and additives are harmful to our health, consumers will eventually choose cheap and trouble-free products.

This kind of "divided consumers", together with "indifferent consumers" who are not interested in food safety, reached 75.4%.

In other words, about three-quarters of consumers support pesticides and additives.

Now that consumers also support additives, the equation of "manufacturer = injurer, consumer = victim" is untenable. Because consumers can be said to be accomplices in the spread of additives and the driving force behind the behavior of manufacturers and sellers.

When shopping in the supermarket and determining the menu for the day, please make valuable choices for yourself and your children's future. I believe that your little choice will be related to the restoration of rich food culture and spiritual reconstruction and other major issues.

postscript

How food is made, why, how much and what kind of additives are used, we consumers can't know.

People who cook should always think of the people who eat, and the food they make is safe and delicious without additives. People who eat should also understand the difficulties of people who cook. I don't mind that the color is a little worse, the taste is lighter and the price is a little more expensive. The seller should also give the eater a detailed explanation.

Thanks to additives, now we can have a meal easily and conveniently. Consumers put forward strict requirements on the appearance, taste, convenience and shelf life of food, so family production is almost impossible. If you really don't add food additives, I'm afraid most foods will be ugly, unpalatable, difficult to preserve, or expensive and unacceptable.

The state strictly controls the types and dosage of food additives, and the overall safety is high. Legal addition will not cause adverse reactions and will not harm health.

Although the toxicity of each food additive is very low, it may still bring side effects if it is ingested too much in the diet. At the same time, the interaction between various food additives and their relationship with the absorption and utilization of food ingredients have not been studied in detail so far. Therefore, it is still wise to avoid taking too many food additives as far as possible, especially for children whose detoxification function has not been fully developed.

We did become rich. However, life has become too comfortable, and that feeling makes people walk on thin ice. It is very likely that things called "dream substances" that have been used for decades will be suddenly banned because of "carcinogenicity".

What have we gained and what have we lost? I hope this article can arouse everyone's thinking.
