2. Cleaning and peeling: put Ophiopogon japonicus into a cleaning tank, wash it with running water, take it out and drain it. Peel the skin by rubbing or chemical method, wash it, put it in 2% salt water, soak it for 8 ~ 12 hours, and take it out.
3. Blanching: Blanch Ophiopogon japonicus in boiling water for 5 ~ 10 minutes, and then take it out and cool it with cold water.
4, sugar system: using multiple boiling sugar method. When boiling sugar for the first time, take 20 kilograms of water, heat it to 80℃, add 20 kilograms of white sugar and 40 grams of citric acid, and cook for 5 minutes. Take 50 kilograms of processed Ophiopogon japonicus, put it in the sugar solution, boil it for 10 ~ 15 minutes, and put it in a vat with the sugar solution and Ophiopogon japonicus for 24 hours. When cooking sugar for the second time, put the sugar solution and Ophiopogon japonicus in the pot, heat until the sugar solution reaches 55%, add 10 kg of white sugar twice, add 20 kg of cold sugar solution with 60% concentration, immediately take it out of the pot and soak it in the pot for 3-5 days.

Baking temperature: drain the prepared sugar solution of Ophiopogon japonicus blocks, evenly put it into a baking tray, push it into a baking room and bake it at 60 ~ 65℃. Bake until the surface of the product is not sticky by hand.
Ventilation and dehumidification: when the relative humidity of the air in the curing barn is higher than 70%, ventilation and dehumidification are carried out for 3 ~ 5 times, each time lasting 15 minutes.
Setting the tray: In baking, besides ventilation and dehumidification, we should also pay attention to changing the position of the baking tray and turning over the pickled parts in the tray. During baking, the tray is reversed 1 ~ 2 times, which can be carried out in the middle, early and late baking.
6. Softening, overhaul and packaging: The preserved Ophiopogon japonicus taken out of the curing barn should be kept indoors at 25℃ for 24-36 hours, and then inspected and renovated to remove impurities, spots and debris on the preserved block, and the unqualified products that have been boiled, dried and browned should be picked out for other treatment. Qualified products shall be packed in nontoxic cellophane paper, boxed and put into storage.
