In order to make the juice have a certain sweet liquid, a certain amount of sugar liquid can be prepared before boiling the plum slices, and then poured into the plum slices. Putting the softened fruit blocks into a beater for pulping, and continuously pulping for two times; And then filtered with a sieve plate of1mm. (3) Adjust the sugar acidity. Test and mix the sugar acidity of the filtered plum juice. Generally, the ratio of sugar to acid is 1: 18 ~ 20. If necessary, add a small amount of sugar or citric acid to the juice. (4) The juice after degassing, homogenizing, pulping and filtering is turbid, and in order to keep its turbidity, it should be homogenized. Put the plum juice into a homogenizer and adjust the pressure to 13.4 ~ 20 MPa for homogenization. At the same time, the pulp passes through the screen, so that the particle size is uniform and no precipitation occurs. The mesh number of the screen is 0.002 ~ 0.003 mm. (5) Canning and sealing the plum juice in an iron can with a net weight of 200 grams or 425 grams. The canning machine is hot and then sealed immediately. When sealing, the temperature in the center of the tank shall not be lower than 75℃. (6) After sterilization, cooling and sealing, pour into the basket and sterilize immediately. Sterilize with a heat exchanger at 65438 035℃ for 65438 05 ~ 30 seconds. If possible, aseptic canning can also be used, that is, using aseptic canning machine, under the control of high-temperature steam, aseptic plum juice can be packed and then sealed. The sterilized plum juice is quickly cooled by cold water to ensure the quality of the plum juice. (7) The canned plum juice after canning and cooling is the finished product. Store the storage tank in a well ventilated, cool and dry place.
