Shenshan town, the hometown of garlic

Shenshan Town was built in the early Tang Dynasty, and it was named after the mountain. Before the Anti-Japanese War, it belonged to Tancheng County. According to the Records of Tancheng County, there is a sacred mountain in the northwest of Tancheng and a palace in Yuan Jun, Bi Xia. The incense is growing day by day, and everyone says there is a god, so it is called "holy mountain". The northwest of Shenshan Mountain is mountainous, and the southeast is the edge of the Yiwu River impact plain. The soil is mainly cinnamon soil and sandy black soil, which is suitable for garlic production. According to folklore, the Jade Emperor was lucky enough to be near the holy mountain. He was thirsty and dug a spring. He planted a grass beside the spring and gave birth to nine leaves. Plague is rampant in Hou Yong, and people suffer greatly from it. They occasionally eat "nine-leaf grass" and get well. Today, the legendary mountain spring is still there. No matter whether it is drought or flood, it will not overflow or dry up, and it tastes sweet. It is called "the fountain of youth". As for this nine-leaf fairy grass, the people have benefited a lot from it, and it has been widely planted and passed down from generation to generation, and it has become a well-known garlic today.

According to the textual research of Notes on Ancient and Modern Times and Agricultural Administration, the garlic planted in ancient times was originally called egg garlic. In BC 1 19, Zhang Qian of the Western Han Dynasty went to the Western Regions for the second time and introduced a kind of "gourd garlic", which was also called garlic because its shape was bigger than egg garlic. According to the "History of the East View", Li Xun, the secretariat of Yanzhou in the Han Dynasty, left a kind of cultivated "gourd garlic" for the local area. According to the Records of Tancheng County, garlic producing areas have been formed in Shenshan Town and Zhuangcun during the Wanli period of Ming Dynasty. It can be seen that Cangshan garlic originated in the Western Regions, and was introduced to Yanzhou from the Central Plains by Li Yao in the Eastern Han Dynasty, and extended to Cangshan.

Shenshan is the birthplace and main producing area of Cangshan garlic, which has been cultivated for more than 1900 years since its introduction in Han Dynasty. At present, the garlic planting area is 25,000 mu, with an annual output of 30,000 tons. Garlic is thick, crisp, fresh and spicy, and can be well preserved. Garlic is big, thin-skinned, white in color, full of petals, spicy and fragrant, thin as paper, innocent as jade and rich in nutrition.

The excellent quality of Cangshan garlic is closely related to the unique ecological environment. Shenshan Town, the main garlic producing area in Cangshan, has four distinct seasons, abundant sunshine and large temperature difference between winter and summer, which is suitable for garlic growth. The endemic sand-buried black soil is mostly river and lake sediments, which are rich in nutrients, stable in water quality and rich in minerals. Garlic area has high groundwater level and many "fat wells", such as Shenshan and Zhuang areas. The salt content of well water is 1264.2 mg/L, the nitrate content is 36.55 mg/L, and it also contains many elements such as calcium and magnesium. Irrigation with these wells is beneficial to high yield and high quality garlic. Under suitable natural conditions, Shenshan garlic has been bred by hardworking and intelligent garlic farmers from generation to generation, forming a unique and excellent variety.

Modern medical research shows that Cangshan garlic is rich in vitamins, amino acids, protein, allicin and carbohydrates. The content of "allicin" is obviously higher than that of other producing areas, so it is called "natural antibiotic". Cangshan garlic is also rich in anti-cancer elements-selenium and germanium, which can improve the disease resistance of human body. 1970- 1974 the national survey of gastric diseases shows that Cangshan county has the lowest incidence of gastric diseases among counties and cities with a population of 654.38+10,000, and the mortality rate of gastric cancer in Cangshan county is one of the lowest in the north of the Yangtze River. The important reason is that local people like to eat garlic. Cangshan garlic is known as "the best garlic in the world", as "Cangshan garlic is the best in China and Cangshan garlic is the best in the world", and won the silver award of the Expo 1999. At present, there are three main garlic varieties in Cangshan: Puke, Coarse Garlic and Gaojiaozi.

The garlic industry has benefited the people, and Fuze Cangshan has been integrated into the local culture. 1996, people of insight in Shenshan Town raised funds to build garlic archway. The archway is simple and elegant, solemn and magnificent, with double dragons playing pearls at the top and light cornices. Shen Peng, chairman of China Book Association, wrote "Garlic is the best in the world" for the memorial arch, and also engraved Cangshan folk song "Garlic Ballad". 1993, garlic tower, the symbol tower of garlic town in China, was built. The tower is an octagonal attic-like wood structure with four eaves and light wings, which is magnificent.
