There is a saying: food is the most important thing for people. However, for people today, the meaning of eating is not only "living", but also not limited to enjoying "delicious food". The reason why "eating" is upgraded to "culture" now is because it contains rich ethnic, historical and regional connotations.
The Cold Food Festival, also known as "No Smoking Festival", "Cooked Food Festival" and "Cold Food Festival", is said to have originated from the State of Jin in the Spring and Autumn Period. On this day, people are forbidden to make fires and can only eat prepared cooked food and cold food, hence the name.
There are two versions of the origin of this custom:
One saying is to commemorate Jiexiu, the courtier of Jin Gong. During the Spring and Autumn Period, Zhong Er, the son of the State of Jin, was exiled to other countries, and Jie Zhitui made great contributions to escorting him. It is said that he once cut off the meat from his thigh to satisfy Zhong Er's hunger. Zhong Er returned to the throne and became the monarch, namely Jin Wengong. At this time, Jie Zhitui lived in seclusion with his mother in Mianshan (now Jiexiu County, Shanxi Province). Jin Wengong sent someone to invite him, but he refused to come out in the mountains.
So Jin Wengong ordered the mountain to be burned and tried to push Jiezhi out. Unexpectedly, Jiezhi didn't want to go out of the mountain and was burned to death with his mother. Jin Wengong was very sad, so he buried Jiezhi in Mianshan, built a temple and renamed Mianshan Jieshan. In order to commemorate Jiexiu, Jin Wengong ordered Jiexiu to be burned to death as a cold food festival. Since then, it is forbidden to make a fire and eat cold meals every year in order to commemorate it.
Another view is that the Cold Food Festival originated from the old system of banning fire in Zhou Dynasty. At that time, there was a habit to change the fire every season. Before the fire in late spring, people were warned not to make a fire and eat cold food. In the old Cold Food Festival, porridge was the main food. According to the Chronicle of Jingchu's Age, "On the 150 th day of last winter festival, there was a strong wind and rain, which was called cold food. No fire for three days, make glutinous rice porridge. "
In addition, there is "Peach Blossom Porridge", which is the food of Han people's Cold Food Festival in Tang Dynasty and is popular in Luoyang, Henan Province. "Guangfang Qunpu" said: During the Cold Food Festival, local people picked fresh peach blossoms and cooked porridge with good rice, which was delicious and nutritious. This custom remained popular until the late Ming Dynasty. As soon as the Peach Blossom Fan was published in the Qing Dynasty, there was such a lyric: "On March 3, Liulang arrived and joined hands to build the building, and the peach blossom porridge was full."
Tomb-Sweeping Day, also known as the Cold Food Festival, has some taboos on Qingming cold food.
1, be careful if you have a bad stomach.
The Qingming cold food is indispensable to the green ball, which is composed of sugar skin, green skin and white skin green ball. Green ball is mainly made of wormwood mixed with glutinous rice, which is a kind of indigestible food. People with poor gastrointestinal function should eat carefully, especially those with pancreatitis, gastritis, cholecystitis and gallstones, as well as the elderly and children. Eating green balls while they are hot, starch will age after cooling, which not only makes the taste worse, but also reduces the digestion and absorption rate, and is also prone to intestinal diseases. Green balls should not be eaten with a lot of oil or irritating food, so as not to increase the burden on the stomach. It should be eaten with vegetables rich in dietary fiber, yogurt with intestine moistening function or hawthorn to help digestion.
2. Snails should be cleaned.
During the Qingming period, snails did not breed. At this time, the snails are fat and full, and they have the reputation of "Qingming snails win geese" among the people, but you should pay attention to eating snails. Most snails grow in dirty places, and there are a lot of parasites in their bodies, which can easily lead to intestinal diseases such as cholera and hepatitis A. Snails bought from the market must be stocked for more than three days, dripped with a few drops of vegetable oil or sesame oil, so that the snails can discharge the mud in the intestinal cavity. Change the water several times a day, brush it with a brush, twist off the tail, blanch it, heat it at high temperature, and fry it thoroughly. At this time, you can cook. There are many ways to eat snails. You can fry them with onions, ginger, soy sauce, cooking wine and sugar. You can also cook, pick snail meat, mix, drink, rot and simmer.
Step 3 stay away from contaminated wild vegetables
During the Qingming Festival, many people will bring some roadside wild vegetables when they go hiking to worship their ancestors, which is very common in Jiangnan area. Wild vegetables are highly sought after in cities full of big fish and meat. Although wild vegetables look good, you can't eat them indiscriminately. Some wild vegetables are poisonous. If it is a potherb on the roadside or near a polluted canal, it will be poisoned if it contains heavy metals such as lead and mercury or other pollutants. In order to maintain the nutritional value of wild vegetables, experts suggest that it is best to eat them by steaming, scalding, making soup or stuffing, and pay attention to the hygiene of the processing links in the cold salad of wild vegetables.
At the same time, don't replenish the liver in this solar term. According to the theory of TCM health preservation, the liver belongs to wood, and the fire is the heart, so the heart will be too strong in this solar term, so this period is the prone period of hypertension, and patients with hypertension should attach great importance to it.
During the Qingming period, the diet should be warm and eat more fruits and vegetables, especially seasonal vegetables such as leeks and shepherd's purse. During the Qingming period, it is also suitable for eating sweet potatoes, Chinese cabbage, radishes, taro and other foods to warm the stomach and eliminate dampness.
