Huangshantou Liquor is produced in Ouchi Town, south foot of Huangshan Mountain, Gongan County, 19 13 by Jingjiang River, with the Yangtze River in the east, Dongting in the north and Xiaoxiang in the south.

Ouchi Town is located in the southeast of Jianghan Plain, at the junction of Hunan and Hubei provinces, only 80 kilometers away from the ancient city of Jingzhou, and is the south gate of Gongan County, Hubei Province. There are 32 peaks in the territory, the main peak is 268.8 meters above sea level, and it has the reputation of "a thousand miles of plains, a unique mountain". "Huangshan Mountain is green, and thousands of pieces fly." Huangshantou is rich in forest resources, forming a rich source of microorganisms in the atmosphere. Microbial sources are rich in microorganisms that are beneficial to wine making, which makes Huangshantou wine full-bodied.

The brewing water of Huangshantou wine is taken from Lotus Pond. Lotus pond comes from the Yangtze River and then flows back to the Yangtze River through Dongting Lake. The Yangtze River water has been the source of famous wines for thousands of years. The water in Dachi Lake is clear and pure, warm in winter and cool in summer, and tastes sweet and delicious.

Good wine needs a good wine cellar.

The way of brewing: material is the soul and cellar is the foundation. In the production of wine, koji is usually made first, then the grain and auxiliary materials are mixed, cooked and gelatinized, cooled and mixed with koji, then put into a cellar for sealed fermentation, and finally cooked at high temperature. The essence of hot air cooling is wine. In the process of wine fermentation, various microorganisms and aroma substances in the cellar were domesticated and enriched, and gradually penetrated into the mud cellar, becoming rich natural aroma sources. The longer the pit age, the more microorganisms and aroma substances, and the stronger the wine aroma, the better the wine will be.

1988, a news from Xinhua News Agency triggered a shock in the liquor industry: China's artificial cellar storage technology made a major breakthrough in Huangshantou.

Under the guidance of Zhou Henggang, a famous liquor expert, the technicians of Huangshantou Distillery carried out the public relations of artificial cellar storage technology. Through the technical analysis of Luzhou-flavor Daqu liquor brewed by natural aged pits, it was determined that the main aroma-producing substance was ethyl caproate, and the golden key to the successful research and development of artificial aged pits was found. Subsequently, Huangshantou developed Barker synthetic culture medium and caproic acid bacteria culture medium, and selected high-quality pits to create favorable habitat for caproic acid and its Luzhou-flavor liquor fermentation.
